Almond Cake



This cake was DELICIOUS! It was actually listed as "Elegant Almond Amaretto Cake" due to this being a cake for my 5 year old nephew I had to skip the Amaretto because it wasn't going to be cooked into the cake it was going to be soaked, which means that I will be trying that version at a different time. It was also a light tasting cake, I ate it and didn't feel like I had gained 5 pounds. Here's the recipe thanks to The Cake Doctor.

For the cake:
baking spray
1 package (18.25 ounces) plain vanilla cake mix
4 ounces reduced-fat cream cheese, room temperature
1/4 granulated (powdered) sugar
1/4 cup all-purpose flour
1 cup of water
1/2 cup of vegetable oil
1/2 teaspoons pure vanilla extract
1 teaspoon pure almond extract
4 large eggs
***if making with amaretto: 3 tablespoons amaretto or other almond liqueur for brushing the tops of the cake layers

For the frosting and garnish:
1/2 cup sliced almonds
8 tablespoons (1 stick) butter, at room temperature
4 ounces reduced-fat cream cheese, at room temperature
***2 teaspoons amaretto
4 to 4 1/2 cups confectioners (sugar) sugar, sifted

Bake at 325 degrees in 3 9-in. round cake.
